“Woku” is a kind of seafood dish with generous use of spices, often making up half the dish. The ingredients include lemongrass, lime leaves, chili peppers, spring onion, shallots, either sautéed with meat or wrapped round fish and grilled coated in banana leaves. Other ingredients similar to turmeric and ginger are often added to create a version of woku. Other Minahasan signature dishes are tinutuan, rooster tuturuga, rica-rica and cakalang fufu. In 2014, the Indonesian Ministry of Tourism and Creative Economy in an effort to advertise Indonesian delicacies, has chosen tumpeng as an official Indonesian national dish. Subsequently the designation of tumpeng as the single nationwide dish of Indonesia was thought of insufficient to describe the diversity of Indonesian culinary traditions.
